Abstract

ABSTRAK This study aims to determine the development of coconut sugar processing business in Kasegeran Village, Cilongok District, Banyumas Regency, Central Java, in November 2020 - July 2021. The methods used are descriptive and case studies. Determination of the location of the study and informants was carried out by purposive sampling. The data obtained in this study include primary and secondary data. The data collection method used an interview guide, participatory observation, documentation, and Focus Group Discussion (FGD). Data analysis uses tabulation of the results of Benchmarking (comparing) aspects of technology/innovation as well as aspects of market potential and opportunities. The results of this study indicate that from the application of good coconut sugar processing techniques at UD Permata Satria, among others, the processing process is the preparation of tapping, taking sap, sap filtering, cooking sap, printing, making crystal sugar, sifting, drying, and packaging. Meanwhile, the application of innovation technology that is not implemented by UD Permata Satria is the filtering of coconut sap that will be used. Potential and market opportunities for coconut sugar business in UD. Permata Satria includes: Potential namely coconut sugar products, partnerships, activities, and opportunities namely marketing, consumers and support. The potential that exists is, among others, the processing of healthy coconut sugar at an affordable price, while the market opportunities that can be exploited are products, marketing, consumers, partnerships and activities. The design of community empowerment carried out for the development of the coconut sugar business is in terms of technological innovation, namely the healthy coconut sugar processing process. ,67%) to 355 (1.18%).
